Cranberry Muffins

Muffin batter made with sugar or Splenda, contains chopped cranberries.
Ingredients
- 2 1/2 cups Flour
- 3/4 cup Sugar or Splenda for baking
- 1 tablespoon Baking powder
- Pinch of Salt
- 3/4 cup Milk
- 1/2 cup vegetable oil
- 2 eggs, beaten
- 2 cups chopped cranberries

Method
Preheat oven to 350 degrees. Sift flour, sugar, baking powder & salt together in a large bowl. Make well in center. Mix milk, oil, & eggs together and pour into well. Stir just to combine. Add cranberries. Pour into greased 2 3/4-inch muffin pans filling 2/3 - 3/4 full. Bake for 20-25 minutes until golden brown.
Notes: Wonderful served warm with a little butter.
