- Servings: 4-6
- Prep Time: 25 min
- Cook Time: 60 - 70 min
- Total Time: 85 minutes
Ingredients:
| 2 cup | All-purpose Flour |
| 1 cup | Sugar |
| ½ Tbsp | Soda |
| 1½ Tbsp | Powder |
| ½ tsp | Salt |
| ½ cup | Butter or Margarine |
| 1 | Egg |
| 1 Tbsp | Grated Orange Rind |
| ¾ cup | Orange Juice |
| 1½ cup | Golden Raisins |
| 1½ cup | Chopped Cranberries |
| 1 cup | Chopped Walnuts or Pecans |
Directions:
Sift together flour, sugar, soda, powder, and salt. Cut in butter until mixture is crumbly. Stir egg with orange rind and juice, blending into flour mixture. Stir until just moistened, and fold in fruit and nuts. Spoon into greased 9 x 5 inch loaf pan, and bake at 350 degrees for 60-75 minutes, or until tester comes out clean. Cool in pan 5 minutes, then invert onto wire rack. Turn right side up, and cool completely. Store well wrapped for 24 hours before slicing.
Helpful Tips:
Make absolutely sure that you bake for the full 75 minutes, and that the pan is extra liberally greased, or the loaf will break on inverting. I've also found that if you let the bread cool longer in the pan, it helps to keep it in one piece.
