Cranberry-Orange Bread

This is an easy and quick "quick" bread. The prep time was only about 10 minutes start to finish and then you just let it bake. I used dried cranberries instead of fresh, pecans instead of walnuts and added an orange cream cheese glaze to dress it up a bit.

2 cups Flour
¾ cup Sugar
1½ tsp Baking Powder
1 tsp Salt
½ tsp Baking Soda
1 cup Sweetened, dried cranberries
½ cup Chopped Pecans
1 Beaten Egg
¾ cup Orange Juice
2 Tbsp Oil
1 cup Powdered Sugar
2 Tbsp Cream Cheese
2 Tbsp Orange Juice


Preheat oven to 350°. Grease 9 1/2 x 5 x 3 inch loaf pan.

Mix dry ingredients including cranberries and pecans.

Combine egg, orange juice and oil. Add to dry ingredients stirring just until moistened.

Pour into loaf pan and bake for 50 minutes, or until toothpick inserted in middle comes out clean. The bread will be golden brown when done. Remove from pan and cool on wire rack.


Beat cream cheese until fluffy. Add other ingredients and mix until smooth.

When bread is cool, transfer to a plate and cover top with glaze, allowing it to drip down the sides.
