Cranmuffins


These muffins contain cranberries that are rolled in sugar and folded into the sweet and buttery batter.



Ingredients:

  • 1 egg, slightly beaten
  • 3/4 cup milk
  • 1/2 cup butter, melted
  • 2 cups sifted flour
  • 1/4 cup sugar
  • 3 tsp baking powder
  • 1/4 tsp salt
  • 1 cup cranberries, coarsely chopped
  • 2 tbsp sugar

Method

In a mixing bowl combine egg and milk. Sift together the dry ingredients; add to the milk and egg mixture along with the melted butter. Roll cranberries in the 2 tablespoon sugar and fold carefully into the batter. Spoon into greased muffin cups, filling cups about 2/3 full. Bake at 350 degrees for 20-30 minutes or until golden brown.

Notes:

Number of servings: Makes about 12 medium muffins.
