Cream Tea Scones

Cream makes these scones extra rich. Serve them warm with coffee or tea.
 

Ingredients

  • 2 Cups Flour
  • 4 Tsp. Baking Powder
  • 2 T. Sugar
  • 1/2 Cup Light Cream
  • 1/2 Tsp. Salt
  • 1/3 Cup Butter
  • 1 Egg
  • 1 Egg Yolk
  • 1 Egg White
  • Sugar-Cinnamon

Method

Mix or sift together flour, baking powder, 2 T. Sugar and 1/2 tsp. salt. Cut in butter till resembles coarse mixture. Combine in small bowl egg, egg yolk, and cream. Add all at once to dry mixture stirring with fork to make soft, slightly sticky dough (add a little more cream if necessary). Press into a ball and knead gently about 10 times on a lightly floured board. Roll out to 1/2 inch thickness and cut into circles. Place on an ungreased cookie sheet, brush with beaten egg white and sprinkle with sugar-cinnamon mixture. Bake 425 degrees 12-15 minutes.
