Cream Cheese-Spice Muffins with Streusel Topper


Softened cream cheese is added to the batter along with coffee crystals, nuts & spices, and a cinnamon-flavored streusel topping is sprinkled on top before baking.



Ingredients:

  • 1/2 cup pecans, chopped
  • 1 cup all-purpose flour, divided
  • 2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/8 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1/4 teaspoon fresh grated nutmeg
  • 1 teaspoon instant coffee crystals
  • 1 egg, beaten
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1/4 cup cream cheese, softened
  • Streusel topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup pecans, chopped
  • 1/2 cup brown sugar
  • 1/4 cup margarine
  • 1 teaspoon cinnamon

Method

Preheat oven to 400 degrees. Grease a 12-muffin cup pan with a nonstick cooking spray. In a small bowl, combine pecans and 2 tbsp of the flour. In a large bowl, combine remaining flour, the baking powder and salt; stir in the sugar, allspice, cinnamon, nutmeg and coffee crystals. In a medium bowl, combine egg, milk, oil and cream cheese. Stir until mixed together. Stir this mixture into flour mixture, along with pecans, until just moistened. Evenly spoon mixture into each muffin cup. In a medium bowl, combine streusel ingredients. Sprinkle on top of each muffin. Bake about 18-22 minutes or until light brown and a toothpick inserted into center comes out clean. Immediately remove for muffin pan and cool on wire rack for 5 minutes. Great served warm with cinnamon butter.

Notes: These muffins melt in your mouth and go well with a cup of coffee. Your family will love these and will ask for them often.
