Creamy Rice and Raisin Muffins

This recipe is like rice pudding in a muffin. These will make a great start to a cold morning with a cup of tea or coffee.
 

Ingredients

  • 2 cups whole milk
  • 1 cup long grain rice, uncooked
  • 1/2 cup raisins
  • 4 tablespoons unsalted butter
  • 4 tablespoons granulated sugar
  • 2 large eggs
  • 1 cup sour cream
  • 3/4 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
 
Method

Preheat oven to 350 degrees. In a medium sized saucepan over medium high heat, bring milk to a boil, and add rice. Cook covered until the rice thickens and milk is absorbed, about 15-20 minutes. Add raisins, stir, and set aside to cool. In a large mixing bowl, cream together butter, sugar, eggs and sour cream. Add flour, baking powder, salt, and nutmeg. Lightly spray muffin tin with baking spray and spoon batter into prepared tin. Bake in preheated oven for about 45 minutes or until tops are golden and spring back when patted with finger.
