Doggie Cakes

These muffins are a healthier option than your traditional corn dog. Dip them in ketchup all the same.
 

Ingredients

  • 2 cups cornmeal
  • 1 1/2 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tbsp sugar
  • 1 egg
  • 1 cup buttermilk
  • 1 tbsp butter
  • 3-4 all beef or turkey hot dogs or breakfast sausage links, cooked and chopped

Method

Preheat oven to 400 degrees and spray a 12 count muffin tin with nonstick cooking spray. Mix and sift all dry ingredients. Mix and hand whisk all wet ingredients. Combine dry and wet ingredients and fold until smooth. Tablespoon mixture into muffin cavities until almost filled. Add meat and bake until muffin tops have slightly browned.
