Dutch Apple Muffins

Vanilla yogurt and apple butter allow these muffins to be moist and tender with less oil--healthy and delicious.
Ingredients
- 2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 teaspoon allspice
- 1 large egg
- 1/2 cup packed dark brown sugar
- 1/2 cup apple butter, homemade or store brand
- 1/2 cup maple syrup
- 1/2 cup apple juice
- 1/2 cup vanilla yogurt
- 1/4 cup corn oil
- Glaze:
- 1/2 cup powdered sugar
- 2-3 teaspoons water, or enough to reach a drizzling consistency

Preheat oven to 350 degrees. Coat two 6 cup muffin pans with cooking spray. Stir flour, baking powder, baking soda, salt and spices in a large bowl until well mixed. Whisk egg and brown sugar in another medium sized bowl until smooth. Stir in apple butter, maple syrup, apple juice, vanilla yogurt and oil. Make a well in the dry ingredients; add wet ingredients and stir until just combined. Spoon into muffin cups. Bake 20 to 25 minutes or until done. Prepare glaze and drizzle over warm muffins.
