Easy Overnight Butterscotch French Toast

This is a big hit with kids and adults alike when served for a special brunch.
 

Ingredients

  • 1 1/2 cup milk
  • 5 eggs
  • 8 slices bread
  • 1 tube refrigerated biscuits
  • 1 tsp salt
  • 1 cup melted butter
  • 1/2 cup brown sugar
  • 2 tbsp molasses
  • 1 box instant butterscotch pudding mix
  • 1 tsp pumpkin pie spice
  • 1/2 cup chopped pecans
  • Optional; maple syrup or whipped cream for garnish

Method

Lightly spray a 9 x 13 pan with nonstick spray. Mix 3/4 cup butter with brown sugar, molasses and butterscotch pudding mix. Pour into pan and swirl to coat pan evenly. Sprinkle chopped pecans over swirled sugar mixture. Tear up bread and biscuit dough into small pieces. Place into pan on top of the sugar and nut mix. In separate bowl, beat eggs, milk, vanilla, salt and pumpkin pie spice. Pour evenly over bread layer. Drizzle remaining butter over top of biscuit and bread layer. Cover with tin foil and chill in fridge overnight. In the morning, remove foil and bake for 45 minutes at 350 degrees. Cut into squares and flip over to serve so butterscotch sauce is on top. This is delicious on its own or it can be served with a drizzle of maple syrup or a dollop of fresh whipped cream.
