Ingredients:
| 3 cups | Flour |
| 1½ cups | Sugar |
| 1 tsp | Cinnamon |
| 1 tsp | Salt |
| 1 tsp | Baking Powder |
| ¾ tsp | Baking Soda |
| 2 cups | Shredded Unpeeled Zucchini |
| 1 cup | Chopped Nuts |
| 3 | Eggs |
| 1 cup | Oil |
Directions:
In large bowl stir together flour, sugar, cinnamon, salt, baking powder, baking soda, zucchini & nuts. In another bowl beat eggs and oil. Pour over flour mixture and stir until moistened. Grease loaf pans. Pour batter in pans and bake at 350 degrees for 1 hour 15 minutes. Check with toothpick. Cool in pan 10 minutes, the remove and place on rack, top side up to cool.
