Eggless Coffee Cake

A great brunch cake with apples and topped with a rolled oats crumble seasoned with brown sugar and cinnamon.
 

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1/4 cup oil
  • 1 teaspoon vanilla
  • 1 peeled, cored grated apple
  • Topping:
  • 1/4 cup rolled oats
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons butter

Method

Combine dry ingredients. Combine wet ingredients, add to dry and mix. Pour into 8X8X2 prepared pan. Mix topping ingredients and sprinkle over top. Bake in preheated 375 degree oven for 45 minutes or until toothpick inserted in center comes out clean.
