Elaine's Muffins With A Plus

The "plus" in these muffins is pulp from juiced vegetables, combined with white & whole wheat flours, leavened with baking soda & baking powder, sweetened with honey & brown sugar.
 

Ingredients

  • about 2 1/2 cups white flour
  • about 1 cup whole wheat flour
  • 1 tbsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/4 cup packed brown sugar
  • 2 eggs, beaten
  • 1 cup milk
  • 1/4 cup olive oil
  • 1/2 cup honey
  • 3/4 cup of pulp from homemade vegetable cocktail (juiced tomatoes, carrots, celery, green onions)
  • 2 tsp vanilla extract

Method

1. Preheat oven to 350 degrees F. 2. Combine all dry ingredients, stirring well together. 3. Combine the liquids and pulp. 4. Add to dry ingredients, stirring just until moistened. 5. Spoon into greased muffin pans. 6. Bake 15 to 20 minutes until golden brown. 7. This recipe makes 2 dozen muffins, depending on the size you prefer.

 

Notes: These muffins are made with the pulp extracted from the vegetable cocktail recipe. They are heart-healthy, filling, and delicious. I developed this some time ago, but thought I would share it with you to enjoy :+D Prep:20m Cook:20m Servings:24
