Extreme Zucchini Bread

Extremely delicious-zucchini bread with pineapple and pecans for an interesting flavor combination.
 

Ingredients

  • 1 cup sugar
  • 3/4 cup brown sugar
  • 1 cup vegetable oil
  • 3 large egg
  • 1 teaspoon vanilla
  • 2 3/4 cups flour
  • 1/2 cup rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 1/2 cups shredded zucchini
  • 8 ounces crushed pineapple, drained
  • 1 cup chopped pecans

Method

Preheat oven to 350 degrees. Grease and flour 2 loaf pans. In a large bowl, combine sugar, oil, eggs and vanilla. Beat with mixer until smooth. Combine the dry ingredients and add to the sugar mixture, beating until smooth. Stir in the zucchini, pineapple and pecans. Pour batter into loaf pans and bake for 50 to 55 minutes. Let cool in pans on wire rack 10 minutes.
