Grated apples and pears make these muffins moist, healthy and delicious.
Cream shortening, butter and both sugars until fluffy. Add eggs and vanilla. Mix until blended. Sift dry ingredients and add. Once blended add molasses and mix well. Add fruit and mix by hand until incorporated. Pour into prepared muffin cups. Use liners or spray individual muffin pan. Bake 30-35 minutes at 375 degrees.
Notes:
Leave peels on apples and pears. Choose slightly tart apples such as Pink Lady or Gala. For pears, do not use Asian as the peel is a little too thick.
