Fat Free Banana Blueberry Bread

Applesauce is used to add moisture to this fat free quick bread instead of oil.
Ingredients
- 1 1/2 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp ground cinnamon
- 1/8 tsp salt
- 1 egg
- 1 cup mashed bananas
- 1/2 cup sugar
- 1/4 cup apple sauce
- 1 tsp finely shredded lemon peel
- 1 cup blueberries

Grease a 9 x 5 x 3 inch loaf pan. Combine flour, baking powder, baking soda, cinnamon, and salt. In a separate bowl combine egg, bananas,applesauce, sugar, and lemon peel. Add liquid ingredients to dry and stir just until moistened. Batter will be lumpy. Fold in blueberries. Pour batter into the prepared pan and bake at 350 degrees for 55-60 minutes. Cool in pan for ten minutes, then remove to a wire rack until completely cool.
Notes: Bread will develop more flavor if it is wrapped and saved for a day before slicing.
