Grandma's Pancakes

These buttermilk pancakes contain 4 eggs, 2 tablespoons of soda and boiling water, plus enough flour to make a nicely thick batter.
Ingredients
- 1 cup buttermilk
- 4 eggs
- 1/4 cup vegetable oil
- 3 to 4 cups flour (add enough to make batter thick)
- 1 cup boiling water
- 2 Tbsp baking soda
- 2 tsp salt

Method
In mixing bowl add buttermilk, eggs, & oil and mix well together. In a separate mixing bowl combine boiling water, baking soda and salt; then add to the pancake mixture. Mix together well. Add flour. On a pancake griddle set to medium heat, pour out 1/4 cup batter onto the griddle; when pancake becomes a light golden brown color on bottom flip and repeat. Serve pancakes with desired pancake syrup.
Notes: These are truly melt-in-your-mouth pancakes that every restaurant should have on their menu!
