Ground Flax & Cranberry Banana Bread

A more flavorful banana bread with dried cranberries, cinnamon, vanilla, and ground flax seed, which adds a slightly nutty flavor. Delicious!

Ingredients:

Unbleached All-purpose Flour
1¼ tsp Baking Powder
½ tsp Baking Soda
¾ tsp Salt
2 Tbsp Ground Cinnamon
½ cup Ground Flax Seed
⅔ cup Sugar
⅓ cup Canola Oil
2 Eggs
1 Tbsp Milk
2 Tbsp Vanilla
1 cup Chopped Mashed Ripe Bananas
1½ cup Dried Cranberries or Craisins

Directions:

Stir together flour, baking powder, baking soda, salt, cinnamon, and ground flax seed.

With electric mixer, beat together sugar and oil. Add eggs, milk and vanilla. Add flour/cinnamon mixture and mashed bananas alternately. Beat until smooth and fold in dried cranberries.

Turn batter into lightly greased 8x4x2-inch loaf pan. Bake at 350 degrees for 60 to 65 minutes or until a wooden pick inserted into the center of the pan comes out clean. Cool in pan for 10 minutes. Remove from pan. Serve slightly warm or cool.
