Healthy Blueberry Banana Nut Bread

Healthy ingredients such as stevia for sweetening, flaxseed, and soy milk are combined with packaged biscuit mix, blueberries & banana for this quick bread.
Ingredients
- 2 cups Bisquick heart-healthy baking mix
- 1 tsp pure Stevia powdered sweetener
- 1 tsp baking soda
- 1 tsp baking powder
- 3 tsp ground flaxseeds
- 1 cup soy, rice, or skim milk
- 2 tsp apple cider vinegar (to be mixed with milk)
- 1 egg white
- 2 tsp vanilla
- 2 tsp butter flavoring (optional)
- 2 ripe bananas, mashed
- 1 cup blueberries, frozen or fresh
- 3/4 to 1 cup broken walnut pieces
- Nonstick spray

Method
In large bowl stir together dry ingredients until mixed. Combine wet ingredients. Add to dry mixture along with mashed bananas. Gently fold blueberries and nuts into batter. Pour into a Bundt pan sprayed with Pam. Bake at 350 degrees for 45-55 minutes, or until bread tests done.
Notes: This bread is so amazingly moist. The fact that you can eat it without guilt is very nice, and I really like it cold from the refrigerator the next day. Ground flaxseeds and Stevia are both readily available at Wal-Mart. The Stevia used in this recipe is pure, however, comes from a local health food store and contains no fillers or maltodextrin.
