Healthy Start Muffins


This muffin is a healthy way to start off your day. All of the wheat ingredients and dried fruits leave a nicely textured and flavored muffin.



Ingredients:

  • 1 cup whole wheat flour
  • 1/4 cup flour
  • 3/4 cup oat bran
  • 1/2 cup wheat germ
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 large apple, coarsely grated, liquid squeezed out  
  • 1 1/4 cups lowfat plain or vanilla yogurt
  • 1/3 cup unsweetened applesauce
  • 1/3 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup shredded coconut
  • 1/2 cup dried cranberries
  • 1/2 cup toasted chopped pecans
  • 2 tablespoons flax seeds

Method

Preheat the oven to 375 degrees F. Spray 12 muffin cups with non-stick spray and set aside. In a medium bowl, whisk together the flours, oat bran, wheat germ, baking soda, spices and salt. In a large bowl combine the grated apple, yogurt, applesauce, honey, eggs, and vanilla, mix well with a rubber spatula. Fold in the flour mixture. Fold in the coconut, cranberries, pecans, and flax seeds and divide the batter evenly among the muffin cups. Bake until a cake tester comes out clean, about 20 minutes. Let the muffins cool on a wire rack for 15 minutes and then unmold. Enjoy these delicious and healthy treats!

Notes: Keep these muffins refrigerated or frozen if not eating within one day. Cranberries can be substituted with chopped dates, golden raisins or dried apricots.
