Hearty Blueberry Nut Muffins


These blueberry muffins are a great way to start out the day. They are also great as a healthy snack to refuel in the afternoon.



Ingredients:

  • Dry Ingredients:
  • 3/4 cup stoneground whole wheat flour
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/3 cup wheat germ
  • 1/3 cup ground flax seed
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup blueberries, fresh or frozen (do not thaw frozen berries)
  • 1/2 cup chopped walnuts
  • Wet Ingredients:
  • 1 mashed banana
  • 1 cup buttermilk*
  • 1 egg, beaten
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla extract

Method

Preheat oven to 350 degrees F. Line the cups of a 12 cup muffin pan with paper liners. In a large bowl, stir together the dry ingredients. Add the blueberries and walnuts and stir to coat with the dry mixture. In a separate bowl, stir together the mashed banana, buttermilk, egg, melted butter, and vanilla. Pour the wet ingredients into the dry ingredients and stir until well combined (do not overmix). Fill muffin lined muffin cups with batter and bake 17-19 minutes.

Notes: *If you don't have buttermilk onhand, yogurt or sour cream can be used in its place, simply thin it out with 2-3 tablespoons of milk.
