Herbed Beer Bread

This quick bread uses self-rising flour to shortcut a step, with Parmesan cheese, Italian herbs, and beer added for flavor.
Ingredients
- 3 cups self-rising flour
- 3 tablespoons granulated sugar
- 1/2 cup Parmesan cheese
- 1 tablespoon dried Italian herbs or 1 teaspoon each oregano, basil and thyme
- 12 ounce beer (at room temperature)
- 1 tablespoon shortening
- 3 tablespoons cornmeal
- 2 tablespoon butter, softened

Method
In large mixing bowl, combine flour, sugar, cheese and dried herbs, then mix well to combine. Stir in beer to produce a stiff batter. Preheat oven to 325 degrees. Grease a loaf pan with the shortening and sprinkle with cornmeal. Turn batter into pan and bake about 65 minutes, or until done. Brush baked loaf with softened butter and sprinkle with a little additional cornmeal, if desired. Turn out after about 10 minutes to cool on rack.
Notes: Recipe can be doubled to produce 2 loaves. Bread may be frozen, wrapped in an airtight package, up to 3 months. It's good served with soups, stews, barbequed ribs, steaks and chowder.
