Herbed Romano Corn Muffins

These corn muffins are a great addition to chili or a meal of soup and salad.Ingredients
- 2 10 oz packages corn bread/muffin mix
- 1/2 cup grated Romano cheese
- 1/2 teaspoon dried Italian seasoning
- 2 eggs, beaten
- 2/3 cup milk
- 2 tablespoons Romano cheese
- 1/4 teaspoon dried Italian seasoning

Method
In a large mixing bowl, combine corn bread mix, 1/2 cup Romano cheese, and 1/2 teaspoon dried Italian seasoning. Add eggs and milk and stir just until moistened. Fill 12 greased muffin cups half full. In small bowl, combine 2 tablespoons Romano cheese and 1/4 teaspoon dried Italian seasoning. Sprinkle this mixture evenly over top of muffins. Bake at 400 degrees for 15-20 minutes or until golden brown. Cool in pans for 5 minutes before removing to wire rack. Serve warm.
