Holiday Pumpkin Bread

Flavorings of orange, rum and brandy are added to a classic pumpkin bread recipe to make this holiday favorite!
 

Ingredients

  • 1-1/2 cups flour
  • 1-1/4 tsp baking soda
  • 1 15-oz can pumpkin
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup cooking oil
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 tsp orange flavoring
  • 1/2 tsp rum flavoring
  • 1/2 tsp brandy flavoring

Method

Mix flour & baking soda; set aside. Mix all other ingredients; beat well. Add flour mixture slowly, beating at low just until combined. Pour into 4 greased mini-loaf pans or one large greased loaf pan. Bake at 350 degrees about 40 minutes for mini-loaf pans; about 1 hour for large loaf pan.

 

Notes: I created this recipe in 1972, after a frustrating search for the "perfect" pumpkin bread. After trying out at least 20 different recipes on my husband and co-workers, this one became the hands-down favorite. No holiday gathering at our house is complete unless the smell of this pumpkin bread is wafting throughout the house. This bread keeps well, and improves with age.
