Honey Bran Muffins

These low fat muffins are made with oat bran, egg whites, and low fat milk. There's honey in the batter, plus 12 teaspoons of additional honey placed in the bottom of each muffin cup, and 12 teaspoons more honey placed in the center of the batter with an insertion tool for extra sweetness.
 

Ingredients

  • 2 Cups Oat Bran
  • 1/4 Cup packed brown sugar
  • 1 Cup lowfat milk
  • 2 Egg whites, lightly beaten
  • 1/4 Cup honey or molasses
  • 2 Tbsp oil
  • 24 Tsp Honey, divided

Method

Preheat oven to 425. Mix all ingredients except for 24 Tsp. of honey in a medium bowl. Lightly grease a 12-cup muffin tin. Place 1 tsp of honey into bottom of each tin. Pour in batter to fill tins to 2/3rds. With an insertion tool, add another tsp of honey in the center of the batter. Bake 15-20 minutes at 425 degrees. Serve muffin, button down, with butter and sliced Bananas.
