Hot Buttered Rum-Pecan Bread

This bread machine loaf contains apple juice, rum extract, brown sugar, pecans and spices. A glaze of powdered sugar, lemon peel, and a little more rum extract is poured over the cooled loaf.
 

Ingredients

  • 3/4 cup apple juice
  • 2 tablespoons water
  • 1 teaspoon rum extract
  • 1 egg
  • 1/4 cup butter, softened
  • 3 3/4 cups bread flour
  • 1/4 cup brown sugar, packed
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cardamom
  • 1/2 cup finely chopped, toasted pecans
  • 1 teaspoon bread machine yeast
  • Glaze:
  • 1/2 cup powdered sugar
  • 1/2 teaspoon rum extract
  • 1/2 teaspoon grated lemon peel

Method

Place all ingredients except glaze in bread machine pan in the order recommended by the manufacturer. Select basic cycle and light crust color. After baking cycle ends, remove from pan and place on wire cake rack. Prepare glaze by mixing powdered sugar, extract and lemon peel in small bowl until smooth. Spread Glaze over top of loaf and let drizzle down sides. Cool completely at least 1 hour before slicing.

 

Notes: This is a joy to make and the aroma is terrific! So simple in the machine and so easy to eat!
