Hot Water Corn Cakes

These easy and traditional southern cakes are made with cornmeal. They work as a great side dish for many spicy dishes.
Ingredients
- 1 1/2 cups cornmeal
- 1 1/2 cups boiling water
- 2 tablespoons melted shortening
- 1/2 teaspoon salt

Method
Sift together cornmeal and salt. Slowly pour water over cornmeal mixture. Add melted shortening and beat hard. Drop by tablespoonfuls onto hot greased griddle or skillet and cook to a golden brown.
