Hush Puppies, Classic Southern-style

The cornmeal-flour-buttermilk batter for these Southern fried treats can have finely chopped jalapeno pepper added, if you wish.
Ingredients
- 1 1/2 cups yellow cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspooon baking soda
- 1 egg, beaten
- 1 small onion, chopped
- 1 cup buttermilk
- 1 finely chopped jalapeno pepper, optional
- Oil for frying

Method
In a large mixing bowl, stir together cornmeal, flour, baking powder, salt and baking soda. In a separate bowl, mix together egg, onion and buttermilk. Stir into dry ingredients until blended, adding jalapeno pepper, if desired. Drop by rounded tablespoons into deep hot fat at 370 degrees. Fry about 1 minute on each side or until golden, turning to brown both sides.
Notes: Because bubbling is not a problem when frying hush puppies, you may want to use a heavy skillet, or fry pan instead of a deep kettle, so that more pieces can be fried at the same time. Good with fried chicken or breaded deep fried fish.
