Indian Muffins

This muffin can be served as a savory dish with herbed butter or as a sweet dish with fruit jams and whipped cream.
Ingredients
- 1 cup apple butter
- 1/3 cup milk
- 1 egg
- 1/4 cup finely shredded mild cheddar cheese
- 2 1/2 cups cornmeal muffin mix

Method
Preheat over to 400 degrees. Mix apple butter, milk, egg and cheese together. Add cornmeal mix all at once and stir ingredients together until just moistened. Spray muffin tins with nonstick spray and use foil or paper liners. Fill prepared muffin cups 3/4 full. Bake muffins 15 to 20 minutes or until golden brown.
