Indian Spiced Sweet Potato Bread

Mashed sweet potato is combined with all-purpose flour, whole wheat flour, and raisins, in this loaf flavored with allspice, cardamom, cinnamon, nutmeg, ginger, and coriander.
Ingredients
- 1 cup water
- 1 large egg
- 1 teaspoon salt
- 1 1/2 tablespoons butter, room temperature
- 2 cups cooked, mashed sweet potato
- 1 tablespoon granulated sugar
- 2 tablespoons brown sugar
- 2 cups all-purpose flour
- 1 cup whole wheat flour
- 1/2 teaspoon allspice
- 1 teaspoon ground cardamom
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon coriander seeds, crushed
- 1 (.25 oz) package active dry yeast
- 1/2 cup raisins, chopped

Measure the ingredients into the bread pan in the following order: water, egg, salt, butter, mashed sweet potato, granulated sugar, brown sugar, flour, allspice, cardamom, cinnamon, nutmeg, ginger, coriander, and yeast. Select basic (or sweet bread )setting and medium crust setting for bread machine. Start the machine then add the raisins at the "beep," following instructions for your type of bread machine. Makes one 1 1/2 pound loaf.
Notes: This beautifully colored and fragrantly spiced loaf reminds us of sweet potato pie but with a twist of coriander, giving an East Indian flavor. All ingredients should be at room temperature before starting.
