This Irish soda bread contains the traditional buttermilk and baking soda, but adds cranberries & apricots instead of the usual currants.

Preheat oven to 350 degrees. Combine flour, baking powder, salt, baking soda, and brown sugar in a large bowl. Stir in the buttermilk and dried fruit. Turn dough out onto a lightly floured surface and knead a few times. Divide dough in half; shape each into a round loaf and place on greased baking sheets. Slit an "X" in the tops with a very sharp knife; bake for 45 to 55 minutes, or until tester comes out clean. Transfer loaves to racks to cool.
This bread is a perfect accompaniment to afternoon tea or coffee, served warm with butter. It also makes great tea sandwiches when spread with cream cheese. Around my house it gets gobbled up for snacks!
