Jalapeno Cornbread

Spicy cornbread from scratch that will bring some zip to every meal. Especially good with chili.
 

Ingredients

  • Dry ingredients:
  • 1 cup flour
  • 2 cups corn meal
  • 1 tablespoon baking powder
  • 1 teaspoon Salt
  • 1 cup sugar
  • Wet ingredients:
  • 1 large onion, chopped
  • 1 cup milk
  • 1 cup oil
  • 4 eggs
  • 1 stick sausage, chopped into inch cubes
  • 3 or 4 jalepenos, chopped
  • 1 can cream corn
  • 1 small jar pimentos
  • 8 oz cheese, grated

Method

Preheat oven to 350 degrees, grease a pan, (10 X 12 X 2) Mix dry ingredients thoroughly in a large bowl. In a separate bowl, thoroughly mix the other (Wet) ingredients. Add wet mixture to the dry, mixing sparingly, just enough to wet all the flour mixture. (The baking powder starts working as soon as it gets wet) Immediately pour mixture into the prepared pan and place in the oven. Check for done in about 30 minutes.

 

Notes: Preheat oven to 350 degrees, grease a pan, (10 X 12 X 2)
