Jen's Olive-Herb Bread

This loaf combines chopped dried tomatoes, kalamata olives, flat-leaf parsley, basil, garlic and parmesan cheese into a savory loaf.
 

Ingredients

  • 8 oz. of warm water
  • 3 cups bread flour
  • 1 Tbs dried basil
  • 1/2 cup grated parmesan cheese
  • 1 tablespoons sugar
  • 1 tablespoon nonfat dry milk powder
  • 2 1/2 teaspoons regular or bread machine active dry yeast
  • 3 cloves garlic, minced
  • 1 cup finely chopped kalamata olives
  • 1 cup chopped flat-leaf parsley
  • 1/2 cup finely chopped (oil-packed) sundried tomatoes, well drained
 
Method

Pour water into bread machine pan. Mix next five ingredients in a bowl with a whisk and add on top of the water. Poke a small hole in the flour mixture with your finger and pour the dry yeast into the hole. Add garlic, kalamata olives, parsley and dried tomatoes; set machine to regular loaf. When finished, remove to wire rack and let cool for 15-25 minutes before slicing.

 

Notes: You may add a generous pinch of red chili flakes to the mixture if you can take a little heat. This is a great bread to have with a dinner salad. Just serve bread with a little bowl of olive oil and balsamic vinegar for dipping, and wow!
