Johnny Appleseed Cake
This is somewhat like a coffeecake, baked in an 8-inch pie plate. The chopped apple and nuts are stirred into a thick batter of flour, sugar, egg, baking powder, flavored with lemon juice and your desired amount of cinnamon.
Ingredients
- 1 cup chopped, peeled tart apples (such as Granny Smith)
- 3/4 cup sugar
- 1/2 cup all-purpose flour
- 1 tsp. baking powder
- 1/2 cup chopped walnuts or pecans
- 1 egg
- 1 tablespoon lemon juice
- 1 tsp. vanilla extract
- Pinch of salt
- Ground cinnamon
- Whipped cream or ice cream

Method
Heat oven to 350 degrees. Butter an 8-inch pie plate or pan. In a large bowl, combine apples, sugar, flour, baking powder, nuts, egg, lemon juice, vanilla, and salt. Stir in cinnamon, as desired. (Batter will be thick.) Spread in pie pan and bake at 350 for 25 minutes. Cool; serve warm or at room temperature. Top wedges with whipped cream or ice cream.
