Kid-Friendly Orange-Bran Muffins

These healthy muffins are made with whole wheat flour, oat bran, applesauce, and dried cranberries, and are flavored with orange peel and cinnamon.
 

Ingredients

  • 1/2 cup packed brown sugar
  • 1/4 cup butter, at room temperature
  • 1 large egg
  • 1 large egg white
  • 3/4 cup lower-fat milk
  • 1/4 cup applesauce
  • 1 tablespoon molasses
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon grated orange zest
  • 1 cup whole wheat flour
  • 1 1/2 cups oat bran
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup orange-flavored dried cranberries (Craisins)
 
Method

Preheat oven to 400 degrees. Put 12 paper cupcake liners in a cupcake pan and set aside. Combine brown sugar and butter in a medium mixing bowl and beat with a mixer at medium high speed until creamed, about 5 minutes. Add egg; mix until blended well. Add egg white mix until well blended. Add milk, applesauce, molasses, vanilla, and orange zest then mix on low speed until combined. In a large mixing bowl, combine flour, bran, baking powder, salt, and cinnamon. Mix with a spoon until well combined. Add milk mixture; stir by hand just until moist; gently fold in Craisins. Using an ice cream scoop, spoon batter in cupcake liners and bake about 18 minutes or until done. Remove and cool on a wire rack.

 

Notes: You can use any of the following: pineapple, apples, red grapes, berries.
