Light Cinnamon Popovers
Delicate, cinnamon popovers are great for brunch or holiday meals.
Ingredients
- butter for greasing custard cups
- all-purpose flour for dusting custard cups
- 5 egg whites
- 1 c low-fat milk at room temperature
- 1 c all-purpose flour
- 1 tsp ground cinnamon
- 2 tbsp butter, melted

Preheat the oven to 450. Grease 6 custard cups, each 3 1/2 inches in diameter, or 6 popover tins with butter, being careful to cover all inner surfaces. Lightly dust each greased container with flour. Combine all other ingredients in a blender and blend for 15 seconds at medium speed. Do not over mix. Divide the mixture evenly among the containers. Bake for 20 minutes. Reduce oven temperature to 350 and bake for 25 more minutes. Pierce the side of each popover with a sharp knife and continue to bake for another 5 minutes. Serve immediately with your favorite spread.
