Lowfat Pumpkin Pancakes

Spiced-up with cinnamon, nutmeg, and allspice, these pancakes make a great breakfast entree.
 

Ingredients

  • 2 1/2 cups water
  • 2 cups reduced-calorie pancake mix
  • 1 16-oz. can pumpkin
  • 2 teaspoons ground nutmeg
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla
  • 1 teaspoon ground allspice

Method

Combine water, pancake mix, pumpkin, nutmeg, cinnamon, vanilla, and allspice; stir just until moistened. Pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy skillet. Cook about 2 minutes on each side or until golden brown.

 

Notes: Serve pancakes with pecans or walnuts, light butter, and maple syrup.
