Great addition to breakfast breads and especially scones.
Zest all 3 lemons and juice them. In a microwave bowl, whisk sugar and eggs until smooth. Add lemon zest, juice and melted butter. Cook at 1 minute intervals, stirring after each minute until mixture coats back of metal spoon. Cover with plastic wrap and place in fridge to set. Usually takes between 30-60 minutes to set.
