Maple Walnut Blueberry Muffins

Enjoy these maple-flavored muffins for breakfast. Full of blueberries and nuts, they are sure to satisfy.

Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 Tablespoon Maple powder
  • 1/4 cup Maple Syrup
  • 1 stick butter (melted)
  • 1/3 cup milk
  • 2 beaten eggs
  • 1 1/4 cups blueberries
  • 1/2 cup chopped walnuts
 
Method

In a large bowl, mix together the flour, baking powder and Maple powder. Set aside. Spray a glass measuring cup with cooking spray. Measure the Maple Syrup into the cup. Add the stick of butter. Put in the microwave, on high for about 1 minute, watching carefully. When the butter is mostly melted, remove from microwave, and stir butter until it finishes melting in the syrup. Add the milk. Add the Syrup/butter mixture to the flour mixture, and add the two beaten eggs. Mix well. Fold in the blueberries and chopped walnuts. Spray muffin tin with baking spray. Fill 2/3 full. Bake at 375 degrees for 20-25 minutes, or until they test done. Cool in pan for 10 minutes, before removing to cooling rack.

Maple powder may be purchased on-line or through the catalog of King Arthur Flour
