Marathon Bread

This quick-bread contains whole wheat pastry flour as well as all-purpose, along with baking powder and soda, spices, milk, eggs and butter. It also has grated carrots, pineapple, nuts, raisins and dried cranberries.
 

Ingredients

  • 2 cups Whole wheat pastry flour
  • 1/2 cup White all-purpose flour
  • 1/2 cup Brown sugar
  • 2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 2 tsp Cinnamon
  • 1/2 tsp Allspice
  • 1/4 tsp Nutmeg
  • 1/4 tsp Cloves
  • 2 Eggs
  • 1 cup Milk (soy milk may be used)
  • 1 tsp Vanilla
  • 1/2 cup Unsalted butter, at room temp
  • 1 cup Grated carrots
  • 1/2 cup Chopped pecans or walnuts
  • 1/2 cup Golden raisins
  • 1/2 cup Dried cranberries
  • 1/2 cup Crushed pineapple with juice
  • 2 Tbsp Rolled oats

Method

Preheat oven to 375 degrees. In a large mixing bowl, combine flour, baking powder, baking soda, spices, and salt. In a separate bowl whisk together milk, eggs and vanilla. Add egg and milk mixture to dry ingredients along with butter; mix well. Add grated carrots, nuts, cranberries, raisins, and crushed pineapple. Pour into greased bread pan and sprinkle top with oats. Bake for 45 minutes or until a knife comes out clean when inserted in the center.

 

Notes: I serve this to my family for breakfast and they love it. It's loaded with vitamins, fiber, nutrients and flavor. You'll want to run a marathon after eating this.
