|½||Cup Crushed Pineapple With Juice|

Preheat oven to 375 degrees. In a large mixing bowl, combine flour, baking powder, baking soda, spices, and salt. In a separate bowl whisk together milk, eggs and vanilla. Add egg and milk mixture to dry ingredients along with butter; mix well. Add grated carrots, nuts, cranberries, raisins, and crushed pineapple. Pour into greased bread pan and sprinkle top with oats. Bake for 45 minutes or until a knife comes out clean when inserted in the center.
I serve this to my family for breakfast and they love it. It's loaded with vitamins, fiber, nutrients and flavor. You'll want to run a marathon after eating this.
