Ingredients:
| 2 | Cups Whole Wheat Pastry Flour |
| ½ | Cup White All-purpose Flour |
| ½ | Cup Brown Sugar |
| 2 | Tsp Baking Powder |
| ½ | Tsp Baking Soda |
| ½ | Tsp Salt |
| 2 | Tsp Cinnamon |
| ½ | Tsp Allspice |
| ¼ | Tsp Nutmeg |
| ¼ | Tsp Cloves |
| 2 | Eggs |
| 1 | Cup Milk, soy milk may be used |
| 1 | Tsp Vanilla |
| ½ | Cup Unsalted Butter, at room temp |
| 1 | Cup Grated Carrots |
| ½ | Cup Chopped Pecans or Walnuts |
| ½ | Cup Golden Raisins |
| ½ | Cup Dried Cranberries |
| ½ | Cup Crushed Pineapple With Juice |
| 2 | Tbsp Rolled Oats |
Directions:
Preheat oven to 375 degrees. In a large mixing bowl, combine flour, baking powder, baking soda, spices, and salt. In a separate bowl whisk together milk, eggs and vanilla. Add egg and milk mixture to dry ingredients along with butter; mix well. Add grated carrots, nuts, cranberries, raisins, and crushed pineapple. Pour into greased bread pan and sprinkle top with oats. Bake for 45 minutes or until a knife comes out clean when inserted in the center.
