Mediterranean Cheese and Spice Bread

Italian yeast bread flavored with parmesan and mozzarella cheese.
Ingredients
- 2 Tbsp olive oil
- 1/2 cup chopped onion
- 1/2 teaspoon minced garlic
- 1/4 cup chopped black olives
- 2 cups warm water
- 2 pkgs active dry yeast
- 2 Tbsp granulated sugar
- 1 teaspoon salt
- 1/4 cup olive oil
- 1 Tbsp Italian seasoning
- 1/4 cup grated parmesan cheese
- 6 cups all-purpose flour
- 1 cup shredded mozzarella cheese
- 1 Tbsp melted butter
- 1 teaspoon sea salt

Method
In a small skillet, saute onion in olive oil over medium heat for 3-4 minutes until onion softens. Stir in garlic and olives. Heat thoroughly. Remove from heat and drain well. Place water in a large mixing bowl. Stir in yeast and sugar until dissolved. Stir in salt, olive oil, Italian seasoning, and parmesan cheese. Beat in 3 cups flour on low speed. Add remaining flour with wooden spoon. Work in mozzarella cheese and drained onion mixture. Knead for 3-4 minutes. Place in large greased bowl. Brush top with oil. Cover and let rise in a warm place until doubled. Shape into two long loaves, 3-inches in diameter. Place three inches apart on a large greased baking sheet. Brush tops with melted butter. Sprinkle lightly with salt. Cover and let rise 30 minutes. Heat oven to 375 degrees. Bake for 25-30 minutes until golden brown.
Notes: This is a deliciously rich and spicy bread that goes well with any Italian dish. It is also great when used for grilled sandwiches.
