Momma's Spoon Bread

This is a classic, good with anything from fried chicken to pulled pork to baked fish.
Ingredients
- 1 cup cornmeal
- 2 cup water (boiling)
- 3 tbsp butter
- 1 tsp salt
- 3 eggs seperated
- 1 cup buttermilk
- 1 cup white cheddar cheese
- 1 bunch green onions, chopped

Method
Preheat oven to 375 degrees F.Grate cheese and chop onions. Seperate eggs and place whites in mixer. Whip to stiff peaks. While whites are whipping, boil water and add cornmeal. Add the butter and salt and cool. Mix the yolks and buttermilk and add to cooled cornmeal mixture. Fold in cheese and onions. Fold in 1/4 of whipped egg whites and then the rest. Pour into well greased pan and bake for approximately 35 minutes or until knife comes out clean when inserted into the bread.
