Oatmeal Chocoloate Chip Banana Bread

Oatmeal and bananas make this bread healthy--chocolate chips and vanilla pudding make it delicious--a sure hit with your family.
 

Ingredients

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup bread flour
  • 1 cup quick oatmeal
  • 1 3.4 oz box instant vanilla pudding
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 3 medium ripe bananas
  • 1/4 cup liquid hazelnut flavored coffee creamer
  • 1/2 cup semisweet chocolate chips

Method

Cream sugar and shortening in large bowl. Add eggs and vanilla and beat until fluffy. Add bananas and coffee creamer and beat well. In separate bowl sift flour, pudding, soda, salt and cinnamon together. Add oatmeal and stir dry ingredients. Add to banana mixture and beat until combine. Fold in chocolate chips. Grease 9 X 5 bread pan. Pour batter in and bake at 350 degrees for 55-60 minutes. Remove from oven and cover with foil right away to lock in moisture.
