Oatmeal Muffins

Oats add texture and flavor to these muffins. Don't overmix the dough or they won't be as light and tender.
Ingredients
- 1 1/2 cups flour
- 1 cup oats
- 1 cup milk
- 1 tablespoon baking powder
- 3 tablespoon sugar
- 1/4 cup oil
- 1/4 teaspoon salt
- 1 egg

Method
Preheat oven to 400. Combine flour, oats, powder, sugar and salt. Beat egg. Add milk and oil. Mix dry and liquid ingredients together (It will be slightly lumpy). Pour into greased and floured muffin pans. Bake 15-20 minutes at 400 (Makes 12 muffins).
