This quick bread combines canned pumpkin with sugars, oil, eggs, and three spices. If you wish you can also add raisins and walnuts.

1 cup Granulated Sugar
½ cup Dark Brown Sugar
½ cup Vegetable Oil
2 Eggs
¾ tsp Salt
½ Tbsp Ground Nutmeg
½ Tbsp Ground Cinnamon
1 tsp Ground Cloves
⅓ cup Water
1 cup Pumpkin
1⅔ cups All-purpose Flour
1 tsp Baking Soda
½ cup Raisins, optional
½ cup Chopped Walnuts, optional


In eclectic mixer combine sugars, oil, eggs, water and pumpkin; mix together on medium speed until thoroughly combined. Sift together flour, baking soda, salt and spices. Add dry ingredients gradually to the wet mixture, beating on low speed.

If desired, fold in nuts and raisins. Pour into a well-greased loaf pan. Bake at 350 degrees Fahrenheit for approximately 1 hour or until sides pull away from the pan and a toothpick comes out clean. Do not over bake. Cool on a wire rack. When cool, wrap in aluminum foil. Let sit overnight before cutting for best results.
