Ingredients:
| 1 cup | Granulated Sugar |
| ½ cup | Dark Brown Sugar |
| ½ cup | Vegetable Oil |
| 2 | Eggs |
| ¾ tsp | Salt |
| ½ Tbsp | Ground Nutmeg |
| ½ Tbsp | Ground Cinnamon |
| 1 tsp | Ground Cloves |
| ⅓ cup | Water |
| 1 cup | Pumpkin |
| 1⅔ cups | All-purpose Flour |
| 1 tsp | Baking Soda |
| ½ cup | Raisins, optional |
| ½ cup | Chopped Walnuts, optional |
Directions:
In eclectic mixer combine sugars, oil, eggs, water and pumpkin; mix together on medium speed until thoroughly combined. Sift together flour, baking soda, salt and spices. Add dry ingredients gradually to the wet mixture, beating on low speed.
If desired, fold in nuts and raisins. Pour into a well-greased loaf pan. Bake at 350 degrees Fahrenheit for approximately 1 hour or until sides pull away from the pan and a toothpick comes out clean. Do not over bake. Cool on a wire rack. When cool, wrap in aluminum foil. Let sit overnight before cutting for best results.
