This old fashioned quick bread is made with zucchini and lemon zest. Save the extra lemon zest for future recipes.

1½ cup Flour
1 tsp Cinnamon
½ tsp Baking Soda
¼ tsp Baking Powder
¼ tsp Salt
¼ tsp Ground Nutmeg
1 Beaten Egg
1 cup Granulated Sugar
1 cup Finely Grated Zucchini or Apple Mixture
¼ cup Oil
¼ tsp Finely Shredded Lemon Zest


1. Grease the bottom of a loaf pan.

2. In a medium mixing bowl combine the flour, baking soda, baking powder, salt, and nutmeg. Make a well in the middle of the mixture.

3. In another bowl combine the remaining ingredients. Add to the flour mixture and stir until just mixed.

4. Pour into pan and bake 55-60 minutes at 350 until toothpick inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely.

Helpful Tips:

You can freeze extra grated lemon zest for use in another recipe.
