Old German Banana Bread

Mashed banana, oil, eggs, sugar and pecans are stirred together with flour to make this quick bread.
 

Ingredients

  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs, beaten
  • 1/2 tsp salt
  • 3 medium bananas, mashed (about 1 cup)
  • 1 1/4 cups sifted flour
  • 1 tsp soda
  • 1/2 cup chopped pecans

Method

Mix sugar, oil, eggs, salt and mashed banana. Add soda to flour and sift; fold into sugar mixture. Do not overmix. Add nuts. Turn into lightly greased and floured bread pan. Thump soundly on table once to reduce air bubbles. Bake at 350 degrees about 40-45 minutes or until tests done.
