Orange Anise Seed Cakes

These mini cakes are a perfect addition to afternoon tea or for a light dessert.
 

Ingredients

  • 1 1/2 cups cake flour
  • 3/4 teaspoon double acting baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons anise seeds
  • 1 1/2 sticks unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 2 teaspoons finely grated orange zest
  • 1 teaspoon pure vanilla extract
  • 2/3 cup sour cream
  • Powdered sugar for garnish

Method

Preheat oven to 375 degrees. Butter and flour 18 mini muffin cups. In a bowl, sift together flour, baking powder, salt and baking soda. Stir in anise seeds. In another bowl, using an electric mixer, cream butter and sugar until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Beat in orange zest and vanilla. Add egg mixture to flour mixture alternately with sour cream, beginning and ending with flour mixture and beating batter after each addition. Divide batter among mini muffin cups and bake 20 to 25 minutes or until a tester comes out clean. Cool cakes in pan for 3 minutes, then turn them out onto a wire rack. Let them cool completely. Dust with powdered sugar just before serving.
