Orange Blueberry Bread

This great sweet bread is perfect for brunch or to give as a gift for the holidays.
Ingredients
- 1/2 cup orange juice
- 1 cup blueberries
- 2 tbsp all-purpose flour
- 1-3/4 cups all-purpose flour
- 1/4 cup cornmeal
- 1-1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 6 tbsp butter, at room temperature
- 3/4 cup sugar
- 1 egg
- 2 tsp orange peel, grated

Preheat oven to 350 degrees F. Grease and flour 1 8-1/2 x 4 loaf pan. In a small bowl, toss together the blueberries and 2 tablespoons of flour. In a medium bowl, combine the cornmeal, baking powder, baking soda, salt and the remaining 1-3/4 cups of flour. In a large bowl, beat butter and sugar on high speed for 3 minutes or until light and fluffy. Add the egg and beat well. Beat in the orange juice and orange peel. Add the flour mixture and beat until blended. Stir in the blueberries and spread in the prepared loaf pan and bake 55-65 minutes or until a toothpick comes out clean. Cool for 5 minutes, remove from pan and cool completely.
