Crepes made with orange juice are cooked and spread with orange marmalade and sour cream, and served with an orange marmalade sauce.

Sift flour in mixing bowl, add salt; stir in egg yolk, whole egg, orange juice, butter and mix all together. Heat crepe pan until it sizzles, add enough mixture to cover bottom of pan. Once edges of crepe curl, turn crepe over. Remove. Place each crepe on waxed paper. Spread marmalade and sour cream on each crepe and roll up. Make sauce of the 1/2 cup marmalade, butter, some brown sugar and cinnamon and spoon over warm crepes before serving.
Wonderful for brunch or breakfast.
